Mint chocolate chip ice cream has always been one of my favorite flavors because it’s creamy, refreshing, and chocolatey all at the same time! This smoothie version is healthy enough to enjoy every single day—even for breakfast. Win-win! It’s the perfect way to cool off on a hot day or refresh after a workout.


Vegan Mint Chocolate Chip Smoothie Ingredients:
- Frozen bananas: For creamy sweetness and thick texture.
- No bananas? Use 1 cup frozen cauliflower, ½ cup plain or vanilla vegan yogurt, or ½ cup silken tofu for creaminess. Since these are less sweet, add 1–2 pitted Medjool dates or a splash of maple syrup or agave to taste.
- Plant-based milk: Any plant-based milk will work, such as oat, soy, or almond.
- Spinach: For that green smoothie boost! Makes the smoothie a bright green color and you can’t taste it.
- Fresh mint leaves: For that cool, refreshing minty flavor. No fresh mint? Use ⅛ teaspoon peppermint extract and adjust to taste.
- Vanilla extract: Enhances the ice cream flavor.
- Vegan chocolate chips: For that classic mint chip flavor. Blend some in for chocolate throughout, and sprinkle extra on top for a fun garnish.
- Protein powder (optional): Add a scoop of your favorite vegan vanilla or chocolate protein powder to make it more filling.
