Skinny Chicken Fajita Salad

Everything you love about fajitas, in salad form. This salad is light and fresh yet filling. Packed with sautéed bell peppers and onions, juicy chicken breast, and crisp romaine lettuce. Top it all off with avocado slices and our homemade, sweet and spicy dressing.

This recipe is fresh and light but still packed with flavor from our delicious, homemade salad dressing. I give you the option of doubling the sugar in the recipe, which is great if you’re used to a sweeter dressing. You can also use sugar substitutes in place of the brown sugar. Honey and stevia are great options.

Ingredient Notes

  • Olive Oil: 1 tablespoon for cooking the chicken and 1 tablespoon for the dressing. You could use vegetable or avocado oil for cooking the chicken and vegetables, but olive oil is recommended for the dressing.
  • Chicken: We suggest using boneless, skinless chicken breasts for this recipe. Thighs could work as well, but they need to a longer cook time.
  • Onion: Cut your onion in half and then into thin slices.
  • Bell peppers: Any color of bell peppers will work for this recipe! Feel free to use one color or multiple colors, depending on what your family likes or what is on sale.
  • Romain Lettuce: Substitute with butter lettuce or mixed greens.
  • Avocado: Add just before serving to prevent browning.
  • Lime juice: Fresh limes are best, and you’ll need about two for this recipe. Bottled lime juice will also work.
  • Red Pepper Flakes: Adds a subtle heat, which you can adjust according to your preference.

Fajita Seasoning

While you can often find pre-made fajita seasoning in grocery stores, we recommend making your own! Each brand differs in its ratios and quality of spices, so using our spice mix will ensure quality flavor. It only takes a few extra minutes and really enhances the flavor of your fajitas. It’s all about being able to control the flavor yourself to get the best.

Red pepper flakes: Another pro of making your own spice mix is that you can control the spice level—if your family isn’t as spice tolerant, you can reduce the amount of red pepper flakes you add in. Or, if you’re really looking for some heat, feel free to add more!

Lettuce Options

Substitutes: We love this chicken salad with crunchy romaine lettuce, but you can easily substitute with butter lettuce, green or red leaf, or a packaged spring mix.

Lettuce Wraps: You could also turn this fajita chicken salad into a lettuce wrap! Use romaine hearts or butter lettuce leaves for an easy, on-the-go chicken wrap!

Alternate Salad Dressings

This recipe has a great, sweet and spicy dressing, but if you’re looking for something a little more mild and creamy, you can pick up a southwestern-style dressing or some ranch from the grocery store. We also have a few other tasty recipes below.

Cilantro Lime Ranch DressingThis is a zesty twist on the classic ranch dressing. The fresh, citrusy flavors of lime and the distinctive taste of cilantro add a refreshing and vibrant touch to the salad, making it an exciting option for those who enjoy a bit of a kick in their dressing.

Ranch Dressing: A classic choice, ranch is creamy and has a balanced flavor that works well with both the vegetables and the meats in the salad. Its richness enhances the overall taste without dominating the other ingredients.

Meal Prep & Storage Instructions 

  • Pre-Cook Chicken and Veggies: Cook the peppers, onion, and chicken ahead of time and refrigerate.
  • Assembly: Assemble the salad without the dressing and store it in the fridge. Add the dressing and avocado just before serving.

You can store undressed salad in an airtight container in the fridge for up to two days, but salad that already has dressing on it does not keep long in the refrigerator and will get soggy quickly.
