Garlic Roasted Asparagus – Connoisseurus Veg

This garlic roasted asparagus is tender, flavorful, and ready in just 25 minutes! Made with just a handful of ingredients, this fuss-free side dish is a delicious way to bring out the best in fresh spring asparagus.

Fresh asparagus is always one of my favorite ingredients to cook with during spring. You may have noticed how I love to share delicious recipes like my vegan cream of asparagus soup, balsamic asparagus pasta, and asparagus stuffed puff pastry this time of year. This season, I have a new favorite, though! Lately, his garlic roasted asparagus has become go-to spring side dish.

This easy side is incredibly simple, comes together in just twenty-five minutes, and absolutely scrumptious. A quick roast in the oven will give you asparagus that’s tender on the inside, lightly crisped on the tips, and infused with zesty garlic flavor. And you only need four ingredients!

- Asparagus.
- Olive oil. Olive oil is my favorite for roasting, but any neutral high-heat oil can be used.
- Garlic. Use really fresh garlic for the best flavor! Look for nice firm cloves with a garlicky aroma.
- Salt.
Tip: Feel free to jazz up your garlic roasted asparagus with additional toppings! Try a squeeze of lemon juice, some vegan Parmesan cheese, or fresh herbs like chopped parsley and dill.

Step 1: Start by preheating your oven to 425°F. You can let it heat up while you do your prep work.
Step 2: Trim the woody ends from your asparagus spears. See my post on how to trim asparagus if you need some guidance.


Step 3: Arrange your asparagus in a single layer on a baking sheet, then rub the spears with olive oil and minced garlic.


Step 4: Pop the baking sheet into the oven and roast your asparagus until they’re browned and tender. It should take just about fifteen minutes!
Tip: You can cut a few minutes off of the roasting time if you like your asparagus firm, or add a few minutes if you prefer it on the soft side.


Step 5: Your garlic roasted asparagus is just about done! Simply give it a sprinkle with salt, then it’s ready to serve.
Frequently Asked Questions
Technically yes, although this recipe works best with fresh asparagus. If you really want to use frozen, don’t thaw it first, and add a few minutes to the cook time. Your asparagus will cook up softer than if you had used fresh.
Garlic is very delicate and burns easily. Make sure to rub it in well so that it’s coated in olive oil. If you still have issues with it burning, you can add it halfway through roasting.
Store any leftovers in an airtight container in the fridge for up to three days. They can be reheated in the microwave, or in a 400°F oven for a few minutes, until hot. Garlic roasted asparagus is also great cold, especially in sandwiches and on salads.

Garlic Roasted Asparagus
Ingredients
- 1 medium bunch asparagus (about 1 pound)
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- ¼ teaspoon salt, plus more to taste
Instructions

Preheat the oven to 425°F.

Trim the woody ends from your asparagus spears (Note 1).

Arrange the asparagus spears in an even layer on a baking sheet, then drizzle them with the olive oil and sprinkle them with the garlic. Use your hands to rub the oil and garlic in.

Place the baking sheet into the oven and roast the asparagus for about 15 minutes, until the spears are tender and lightly browned in spots.

Sprinkle the asparagus with salt. Serve.
