Seitan Recipes Troubleshooting Tips:

  • Too tough or rubbery? You may have overmixed or overkneaded the dough. The more you knead it, the tougher it gets.
  • Too bubblegum or gooey? It’s likely that you didn’t steam the seitan long enough. The seitan must reach an internal temperature of 160°F (71 °C) to set properly.
  • Too dry or bready? If you skipped steaming, the seitan will likely turn out tough and dry. Steaming is crucial to get that juicy, meaty texture!
